PASTA WITH THERMOMIX!


Just a little midweek note to all our readers who live in Victoria; Divella Pasta, (whose product is only available in Victoria) are giving away a Thermomix in a competition! WOW, we have a come a long way in the 2.5 years I have worked here! So as a heads up, one of our lovely Victorian consultants has developed the recipe below for said pasta...if you are longingly waiting for your Thermomix, funding for your Thermomix or if you would just like another Thermomix...and you can get your hands on some Divella pasta...check out the details HERE!

In the meantime, make yourself feel all Italian with this lovely Spaghetti with Artichokes recipe.


Ingredients
60g Parmesan cheese
1 medium onion, peeled and quartered
2 cloves garlic peeled
5-10g capers
20g anchovies
30g olive oil
200g marinated artichokes
1200g water
350g Divella Spaghetti
EVOO (Extra Virgin Olive Oil) for dressing
Parsley
Sea salt and pepper

Method
Place Parmesan cheese into TM bowl and mill for 10 seconds on speed 9. Set aside.
Place onion, garlic, capers, and anchovies into TM bowl and chop for 2 seconds on speed 6. Add oil and sauté for 2 minutes at 100ºC on Reverse + speed 2.
Add artichokes and tsp salt to onion mixture and cook a further 10 minutes at 100ºC on Reverse + speed 1.
Set aside in ThermoServer.
Place water and a heaped tsp salt into TM bowl and heat for 10 minutes at 100ºC on Reverse + speed 3.
Add spaghetti through the hole in the lid and cook for time indicated on the packet at 100ºC on Reverse + speed 1.
Carefully check that the pasta is ‘al dente’ before draining and placing in large heated pasta bowl. Drizzle with EVOO and toss through artichoke mixture. Add a few sprigs parsley
Serve immediately sprinkled with Parmesan cheese and freshly ground black pepper.
Serve with fresh green salad.

Well you don't have to twist my arm to try this. It has all my favorite Mediterranean flavors! Thanks for another simply Thermomix "comfort food" type recipe.

I would make this for myself for lunch, but, unfortunately, men in my family dislike anchovies, capers and parmesan cheese! Heaven help me!

Oh dear Bush Gourmand...I say half the recipe and make it for yourself anyway...you can always eat left overs yourself...they may even last longer than normal!
